Skyr Cacao Mousse

Blended oats + protein powder microwaved into a fluffy cake. 3 minutes, tastes like dessert for breakfast.

  • Rolled oats½ cup (~45g)
  • Vanilla protein powder1 scoop (~30g)
  • Egg1
  • Milk (any)½ cup (~120ml)
  • Baking powder½ tsp
  • Maple syrup or honey1 tbsp
  • Vanilla extract½ tsp
  • Pinch of saltpinch
  • Chocolate chips or berries (optional topping)1 tbsp
  1. Add all ingredients except toppings to a blender and blend until completely smooth.
  2. Spray a large microwave-safe bowl or ramekin with cooking spray. Pour in batter.
  3. Microwave 2-3 min, checking at 2 min — done when top is set and not wet. Alternatively bake at 180°C for 25-30 min.
  4. Top with chocolate chips, nut butter drizzle, or fresh berries. Eat warm.
Use a large bowl — it expands in the microwave. Swap maple syrup for allulose to reduce sugar. Add cocoa powder (1 tbsp) for a chocolate version. Can also make in muffin tins (triple batch, bake 15 min at 180°C) for weekly meal prep.
